Hi I'm Mindy!

Homesteader, mama, and home-cook since the ’90s. I share simple, heart-filled meals, raw milk wisdom, free range chickens, and encouragement for the everyday mama. So glad you’re here friend!

Things to Consider

This queso is easy to customize depending on what you have on hand. We usually make it with our ground beef, but the mild sausage is also delicious and adds a little extra flavor.

For a crowd, simply double the recipe to fill a crock pot and keep it warm for serving.

We use Barli Girl Farm's taco seasoning (available in our Farm Market Shop) but your favorite taco seasoning will work great, too.

And if you don't have access to raw milk, regular whole milk can be used in its place.

Yield & Prep Time

Yield: About 8+ servings (depending on what else is served or if this is the only snack)

Kitchen Tools I Use to Make Beefy Queso Dip

  • Large skillet
  • Slow cooker
  • Wooden spoon or spatula
  • Cheese grater
  • Measuring spoons
  • Measuring cup

Beefy Queso Ingredients Needed

  • 1 lb ground beef, browned (or mild sausage)
  • 1–2 tablespoons taco seasoning
  • 1½ teaspoons smoked paprika
  • 1 can Rotel
  • 4 oz cheddar cheese, shredded
  • 4 oz pepper jack cheese, shredded
  • 16 oz Velveeta, cubed
  • 1 cup raw milk

Substitutions

Ground Beef: Mild sausage works great in place of ground beef.

Raw Milk: Regular whole milk can be used if you don't have raw milk available.

Cheese: Feel free to adjust the cheddar or pepper jack to your preferences, just keep the Velveeta for that classic creamy queso texture.

Taco Seasoning: We use Barli Girl Farm’s Taco Seasoning, which is stocked in our On Farm Shop. If you don't have access to it, your favorite taco seasoning will work great, too!

Making Beefy Queso Dip

(Step-by-Step Instructions)

1. Brown the Meat

Brown the ground beef or mild sausage in a skillet, then stir in the taco seasoning and smoked paprika.

*If you have an Instant Pot, you can use the saute function to brown the meat and then use slow cooker to finish this queso dip all in one pot.

2. Prep the Cheese

Shred the cheddar and pepper jack cheese, then cube the Velveeta.

3. Combine Ingredients

Add the seasoned meat, Rotel, all the cheeses, and raw milk to your slow cooker. Stir to combine.

4. Heat Until Melted

Cover and cook on LOW for 1–2 hours, stirring occasionally, until all the cheese is melted and the queso is warmed through. Switch to WARM for serving. (Need it ready a little quicker? Start on HIGH, stirring often and keeping an eye on it. Once everything is melted and creamy, switch to WARM.)

5. Serve & Enjoy!

Serve warm with tortilla chips and enjoy!

How to Serve and Store Beefy Queso Dip

Serve warm with tortilla chips, or spoon it over tacos, nachos, burrito bowls, and other favorite Mexican-inspired dishes. Leftovers can be stored in an airtight container in the refrigerator for 3–4 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk if needed to loosen it back up.
